Pajore is a fifty year old vineyard, at 420 metres, grown on limestone and one which Sottimano belives combines all of the bset of the other vineyards, creating the most classical and elegant of all the wines. The 2006 vintage was given twenty months in French oak, of which 25% new, and the wines are serious and beautiful, but require patience too!

A blend of 51% Cabernet Sauvignon, from the cooler coastal vineyards, with 49% Shiraz from the warmer sites including Barossa, this is aged in a combination of new and used French and American oak casks. More closed on the nose than the Langoa, tighter and dryer, firmer style. Reasonable fruit but surprisingly firm. The fruit stays on the finish. Very classical, very Barton. At the Chateau it showed differently, crushed raspberry and blackberry, smooth texture but with grippy but non-violent tannins - the fruit more on the ascendant, and the tannins not so obvious.
