Oatmeal with a drizzle of honey on the nose. Linear acidity, very taut and tight and lips pursed with primness at the moment, but those notes of papaya and honeyed hints make all sorts of promises. (TC)

Pale yellow-straw. Subdued but clean aromas of ginger, yellow peach, wild herbs and truffle. Juicy, densely packed and intensely flavored, with strong acidity giving shape to the rich middle palate. A concentrated, spicy wine with a strong back end. In a traditional style but a bit less earthy than the Homme Mort.

Domaine Adhémar et Francis Boudin
Francis Boudin continues to make wines that are, for Chablis, rich and yellow gold, fatly concentrated, unoaked and pure, with a mildly buttery edge rounding out that minerally, stony ethereal Chablis character. These are wines which can be consumed with enormous pleasure in their first year after the harvest, or kept (even the simple Chablis) for several years.
