Giuseppe Giusti

The Giusti family's links to balsamic vinegar go back to at least 1605 when they are first documented, but probably go back a couple of centuries before. In 1863, Giuseppe Giusti was the first person to write down a "recipe" for making balsamic vinegar.

The family have a legendary collection of centuries old barrels for ageing their aceto, some dating back to the 1500's.
