'Dernier jus' is a reference to the fact this is a blend of press wines, mostly from Pouilly Fuisse. Quite something for a Bourgogne Blanc.

100% stainless using mostly the press wine from higher appellations, in particular Pouilly-Fuissé. A fresh and expressive nose that carries a hint of lactic on it with otherwise pretty floral and orchard fruit aromas that complement the rich and notably concentrated flavors and the press wine, which is naturally high in extract, confers a distinct textural quality on the persistent if not overly complex finish.   85/100
