Grown high in the foothills of the Cevennes, the grapes are cooled by air coming down from the hills at night. This develops the subtle dark chocolate and cherry-fruited and herbal expression of Syrah, making something more similar to Côte Rôtie than wines from most of the Languedoc. Serious wine at a sensible price.
