Light, firm nose, a whiff of the sea, salty oyster-shell stones. Enough volume to give a full, soft mouth feel and to partly cover the rapier-like acidity and mineral drive. Very pure. Minerals still popping away on the finish. Lovely pure length. L&S (Nov 2011)

Here too the wood is discreet but not invisible with spicy and fully exotic fruit aromas that telegraph the presence of plenty of minerality that appears on the rich, powerful and impressively concentrated flavors that ooze a mouth coating dry extract on the delicious, complex and energetic finish. I admire the way the 2010 Chablis Vaudesir wraps around the palate with serious depth and richness. Aging in oak gives the Vaudesir considerable textural richness, yet the wine remains polished and light on its feet. Here the oak appears to be better balanced than the Secher, or, to put it another way, the fruit has more inherent depth and pedigree so as to be less overtly marked by the cooperage. Layers of fruit build to a generous, textured finish laced with subtle floral and spice notes. This is a strong showing from Drouhin-Vaudon. Enticing, high-pitched aromas of white peach, lavender and medicinal herbs. Dense, sappy and vibrant, with lovely floral and spicy lift to the ripe, silky stone fruit flavors. Domaine Drouhin Vaudon

The Beaune-based merchant Joseph Drouhin has restyled its Chablis Domaine 'Domaine Drouhin-Vaudon' to emphasise its ties with and holdings in (38 hectares) the Chablis vineyard. The Moulin de Vaudon, an 18th Century watermill straddling the Serein River, close to the Grand Cru vineyards of Chablis, is the headquarters and the source of the name. It is the largest estate in Chablis entirely farmed biodynamically.
