Grown high in the foothills of the Cevennes, the grapes are cooled by air coming down from the hills at night. This develops the subtle dark chocolate and cherry-fruited and herbal expression of Syrah, making something more similar to Côte Rôtie than wines from most of the Languedoc. Château de Lascaux

Situated in the Pic St Loup area of the Languedoc, the 45 hectare family estate of Jean-Benoit Cavalier dates back to 1750. At 120 meters above sea level, and surrounded by the 'garrigue' the vineyards are planted predominantly with Syrah and Grenache. The combination of practicing sustainable agriculture, restricting yields and great wine making results in wines of great character reflecting the 'terroir' of the property. Organic certification from 2009.
