This is a blend of Chenin Blanc, Viognier and Crouchen, the grapes dried in a passito style before being pressed. Complex, concentrated flavours of orange peel, honey and preserved lemons are delivered on the textured but fresh palate - sublime. Rating: 90+ Decanter Magazine (May 2015)

60% Chenin Blanc, 23% Viognier and 17% Crouchen, using grapes dried on straw. Harvesting took place during the 2nd and 3rd week of Feb 2011 with a yield of 21 hl/ha. Grapes then laid out on straw for about 4 weeks, allowing them to slowly dehydrate, concentrating the natural sugar, acid and flavour. Gently pressed for 4 - 5 hours, resulting in a small juice yield. After 72 hours cold settling, the juice was racked to old 300l French oak barrels, inoculated with Zymaflor ST and fermented for 7 weeks to 11% alc. Further 8 months of barrel maturation, then prepared for bottling. Pale gold. Smoky and round and peachy. Fresh and hard work - so tart. Rustenberg

Vineyards producing the grapes for Rustenberg's wines climb the rich red slopes of the Simonsberg and Helderberg. The style of wine determines the vineyard to be used: Rustenberg has a history of success with reds.

The viticulturist, Nico Walters, and his dedicated team have been working hard to rejuvenate their vineyards by planting virus-free vines imported from France. A small-scale nursery has been started for propagation, providing available rootstock for upgrading, replanting and experimentation. Controlled irrigation is used when necessary to alleviate stressed vines and maximise the quality of the grapes. All grapes are hand-harvested in the early mornings and all vineyard blocks vinified separately, then blended for added complexity.
