A Fino with brains, this is a very grown-up special parcel Sherry from a single vineyard and with an average age of 9-10 years (the typical of a Fino is 4-5 years). The result is extra complexity, extra depth, extra texture, and some serous oomph in flavour thanks to a smoky layer giving extra structure to that salty freshness. LA BOTA DE FINO (nº 35) “Macharnudo Alto”, saca of June, 2012 D.O. Jerez - Xérès - Sherry 15% alc. - 75cl Valdespino, Jerez de la Frontera Production: over 5,000 bottles

La Bota de Fino 35 "Macharnudo Alto" is a saca made in June 2012 from the same batch of casks that already gave us the five previous editions of La Bota de Fino. This time it is a selection from the solera, the first criadera and the second criadera, with an estimated average age of ten years. The nose shows very complex aromas, with some menthol accented hints reminiscent of La Bota de Fino 7. However this new release is not as marked by the autolysis of “flor” yeasts as it was the previous edition, no. 27, since it is in the solera where the flor is almost exhausted, while in the first and especially the second criadera the yeast is still very lively and active. This is a wine for connoisseurs, bottled almost unfiltered in order to preserve its golden color and racy character. It can be decidedly enjoyed upon release, and its evolution in bottle will continue to delight consumers for many years, provided it is stored with the same care as any other fine white wine. It performs best at temperatures ranging from 10º C, where it shows a lighter and fresher profile, to 13º C, where it fully displays its complex and rich aromatic range. On the table it is a most versatile wine, successfully matching a wide array of diverse foods: of course iberian ham, but also seafood stews, shepherd’s pie, "a feira" octopus, grilled vegetables… Winemaker's notes (Dec 2012)
