The rarest form of all sherries, Palo Cortado is also the most natural in that it cannot be 'made' as such. Very intense, very concentrated and very long, again this is dry but with some light and soft touches making it a joy to drink. (This is the base wine to GB's rather expensive 'Apostoles'). Perfect match would be seared scallops and jamon serrano. A bargain at this price.
