The story of Lillet is that it was originally created entirely by accident in Bordeaux when a long forgotten vat of sweet white wine was discovered in the cellar, and to which the owner added macerated fruits and spices to mask the oxidative flavours. Whatever the true origin, it is made today using 85% Bordeaux white wines, blended with citrus fruits, bitter orange peels and the addition of a liquer of Chinchona bark from Peru, containing quinine. It is a fabulous aperitif poured over ice with a twist of orange peel and makes an extraordinarily good dry martini. L&S (Jun 2011)
