Did you brave the snow and sleet on the \u201cGlorious 12th\u201d \u2013 pint in one hand, brolly in the other, shivering away next to a tiny little patio heater that definitely was not recreating those visions of Southern Californian outdoor dining that we all had in mind when we made those bookings\u2026 Thankfully we\u2019ve had a few nicer days since then, and (at time of writing!) the weather\u2019s looking a little jollier for the bank holiday weekend, although I won\u2019t quite be hanging up my thermals just yet.<\/p>\n<div style=\"border: 1px solid lightgrey; height: 1px; max-width: 100px; margin-left: auto; margin-right: auto;\"><\/div>\n<h2>Peas &amp; Broad beans<\/h2>\n<p><img loading=\"lazy\" decoding=\"async\" class=\" wp-image-33315 alignright\" src=\"https:\/\/blog-2207a.kxcdn.com\/blog\/wp-content\/uploads\/2021\/04\/Peas-Broad-beans-rotated.jpg\" alt=\"Peas &amp; Beans\" width=\"229\" height=\"344\" srcset=\"https:\/\/blog-2207a.kxcdn.com\/blog\/wp-content\/uploads\/2021\/04\/Peas-Broad-beans-rotated.jpg?format=webp&amp;quality=95&amp;bg=ffffff 400w, https:\/\/blog-2207a.kxcdn.com\/blog\/wp-content\/uploads\/2021\/04\/Peas-Broad-beans-200x300.jpg?format=webp&amp;quality=95&amp;bg=ffffff 200w\" sizes=\"auto, (max-width: 229px) 100vw, 229px\" \/>We\u2019ll start then with all things green \u2013 <strong>peas and broad beans<\/strong> are in, which is great news for all those warm, salad-y type al fresco lunches we\u2019ll soon be having (fingers crossed!). If you have the time (or perhaps some children with idle hands) buy peas in their shells and get podding. A natural friend of leafy herbs, toss your peas with fresh mint, basil, tons of olive oil and chuck a milky soft burrata on top. For your broad beans, pod them twice (a necessary chore) and serve with fried bacon lardons and poached eggs, or blitz them with tahini and lemon juice to make a gorgeous fresh hummus. Broad beans are amazingly versatile for wine matches, but I can think of little better than <a href=\"https:\/\/www.leaandsandeman.co.uk\/wine\/2018-CHATEAU-BEAUMONT-Blanc-Les-Pierrieres-Blaye-35826-00.html\">2018 CH\u00c2TEAU BEAUMONT Blanc &#8216;Les Pierri\u00e8res&#8217; Blaye<\/a> \u2013 the barrel fermentation here gives a lovely little texture to the clean, fresh and utterly quaffable Sauvignon\/S\u00e9millon blend.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-32820\" src=\"https:\/\/blog-2207a.kxcdn.com\/blog\/wp-content\/uploads\/2021\/02\/Food-border.png\" alt=\"cook and drink border \" width=\"600\" height=\"75\" srcset=\"https:\/\/blog-2207a.kxcdn.com\/blog\/wp-content\/uploads\/2021\/02\/Food-border.png?format=webp&amp;quality=95&amp;bg=ffffff 600w, https:\/\/blog-2207a.kxcdn.com\/blog\/wp-content\/uploads\/2021\/02\/Food-border-300x38.png?format=webp&amp;quality=95&amp;bg=ffffff 300w\" sizes=\"auto, (max-width: 600px) 100vw, 600px\" \/><\/p>\n<h2><strong>Spider Crab &amp; Brown Crab<\/strong><\/h2>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"wp-image-33320 alignleft\" src=\"https:\/\/blog-2207a.kxcdn.com\/blog\/wp-content\/uploads\/2021\/04\/Singapore-spicy-crab-square.jpg\" alt=\"Spicy singapore crab square\" width=\"238\" height=\"238\" \/><\/p>\n<p>In last Saturday\u2019s Guardian Feast magazine, Felicity Cloake had a recipe for Singapore Chilli Crab, which I haven\u2019t been able to get out of my head. Happily then, both<strong> spider crabs<\/strong> and <strong>brown crabs<\/strong> are in season, so stock up and be prepared to get messy. If you prefer your crab already picked and prepped for you, but still fancy a spicy kick, crab cakes are easy to prepare and can be as fiery or tame as you want them, or \u2013 even simpler \u2013 stir your crab meat through fresh pasta with a pinch of dried chilli and a squeeze of fresh lemon. Obviously, with a very messy Singapore Chilli Crab a bucket of cheap lager is the go-to, but off-dry Rieslings work a treat too. <a href=\"https:\/\/www.leaandsandeman.co.uk\/wine\/2019-SCHIEFER-Riesling-Trocken-Qba-Weingut-Lehnert-Veit-43473-00.html\">2019 SCHIEFER Riesling Trocken Qba Weingut Lehnert-Veit<\/a> for its ripe yellow fruits, or <a href=\"https:\/\/www.leaandsandeman.co.uk\/wine\/2015-TONGUE-IN-GROOVE-Riesling-28357-00.html\">2015 TONGUE IN GROOVE Riesling<\/a> for its incredible papaya, mango and lime leaf flavours.<\/p>\n<h2>Pigeon<\/h2>\n<p>One of our favourite restaurant customers, the ever-wonderful Medlar in Chelsea, mentioned a new <strong>pigeon<\/strong> dish which has also been making my mouth water \u2013 pigeon breast, confit leg, saut\u00e9ed gnocchi, rainbow chard\u2026 truly the stuff of dreams. Head Sommelier Melania is on the hunt for the perfect sherry to pair with this dish, for the Copa Jerez international competition \u2013 we\u2019ll let you know what she goes for, but if you need some wine to pair with your pigeon immediately then the <a href=\"https:\/\/www.leaandsandeman.co.uk\/wine\/2016-RIPPON-Rippon-Mature-Vine-Pinot-Noir-43550-00.html\">2016 RIPPON &#8216;Rippon&#8217; Mature Vine Pinot Noir<\/a> is stylish, supple, and spicy all in one.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-32820\" src=\"https:\/\/blog-2207a.kxcdn.com\/blog\/wp-content\/uploads\/2021\/02\/Food-border.png\" alt=\"cook and drink border \" width=\"600\" height=\"75\" srcset=\"https:\/\/blog-2207a.kxcdn.com\/blog\/wp-content\/uploads\/2021\/02\/Food-border.png?format=webp&amp;quality=95&amp;bg=ffffff 600w, https:\/\/blog-2207a.kxcdn.com\/blog\/wp-content\/uploads\/2021\/02\/Food-border-300x38.png?format=webp&amp;quality=95&amp;bg=ffffff 300w\" sizes=\"auto, (max-width: 600px) 100vw, 600px\" \/><\/p>\n<h2>Rhubarb (Sweet)<\/h2>\n<p>We haven\u2019t mentioned puds on this blog yet, mainly because your humble author is a competent cook, but absolutely disastrous baker. With a bit of luck, patience, hope and prayer however, even she can pull off a rhubarb crumble, with the season\u2019s best <strong>field-grown rhubarb<\/strong>. Serve warm with a generous glass of cold <a href=\"https:\/\/www.leaandsandeman.co.uk\/wine\/2014-COTEAUX-DU-LAYON-BEAULIEU-L-Anclaie-Chateau-de-Pierre-Bise-27284-00.html\">2014 COTEAUX DU LAYON BEAULIEU L&#8217;Anclaie Ch\u00e2teau de Pierre Bise<\/a> \u2013 an outstanding Loire sweetie. Chenin Blanc\u2019s natural acidity makes it a perfect candidate for sweet winemaking, with more versatility and freshness than the more classic Sauternes.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter wp-image-33319\" src=\"https:\/\/blog-2207a.kxcdn.com\/blog\/wp-content\/uploads\/2021\/04\/Rhubarb.jpg\" alt=\"Rhubarb\" width=\"375\" height=\"250\" \/><\/p>\n<h2>Rhubarb&#8230; for a savoury twist<\/h2>\n<p>It\u2019s not just desserts though &#8211; rhubarb makes a brilliant sauce too for savoury dishes \u2013 think barbecued lamb in flatbreads with yoghurt and rhubarb sauce. Cook the rhubarb down in equal quantities good quality white wine vinegar and sugar, with whatever spices you fancy, and spoon liberally over charred meat. Simply perfect with gallons of ros\u00e9 \u2013 perhaps <a href=\"https:\/\/www.leaandsandeman.co.uk\/wine\/2020-BANDOL-Rose-Domaine-Tempier-44654-00.html\">2020 BANDOL Ros\u00e9 Domaine Tempier<\/a> if you take Ros\u00e9 seriously \u2013 or a slightly chilled red, perhaps the vibrant carbonic red fruit of <a href=\"https:\/\/www.leaandsandeman.co.uk\/wine\/2020-ARTUKE-Rioja-44648-00.html\">2020 ARTUKE Rioja<\/a>.
