I loved the 2015 Minervois les Fontanilles. Made from equal parts Syrah, Grenache, Cinsault and Carignan, aged in equal parts stainless steel and barrel, it offers outstanding notes of black raspberries, cassis and a liquid rock like minerality. It has an inherent elegance and freshness (probably due to this higher elevation, unique terroir), and I suspect will evolve nicely for 4-6 years. Vineyards are located in Cazelles, just north of Carcassonne and in the shadow of the Montagne Noir, in the hills where temperatures are cooler and terroir varied. The higher elevation—interestingly, the exact same elevation as in Vosne-Romanée—allows for grapes to ripen slowly, preserving their natural acidity and keeping alcohol in the finished wines moderate. One particular highlight of the estate is a walled plot of 100-year-old Carignan vines. Vines are cared for according to “lutte raisonée” principles, following organic practices and avoiding chemical treatments as much as possible. Grapes are harvested by hand and fermented on indigenous yeasts in temperature-controlled, stainless steel tanks. Wines are aged, depending on the cru, in a combination of tank and older French oak barrique. Winemaker's notes (Apr 2017)

Anne Gros and Jean-Paul Tollot (Domaine Tollot-Beaut) have taken over some wonderful vineyards in the Minervois, and brought Burgundian savoir-faire to an area which all too often produces sweet or leaden-footed lumpen wines. These wines have a style of lively freshness which is so uncommon anywhere in Languedoc-Roussillon. We were bowled over by their drinkability, and feel they offer so much in terms of character and flavour, while remaining easy to approach, mineral and light of touch.
