Corsican wine is gradually becoming better known but Jason Yapp and Tom Ashworth of Yapp made one of their legendary buying trips to this Mediterranean island in the early noughties and quietly signed up the best producers. One of those is Domaine Saparale, an estate on the west of Corsica that is owned by the Farinelli family. I always find it difficult to decide which of the Saparale wines I like the best: the red, the white or the pink. The rosé is made from sciacarello, nielluccio (sangiovese) and vermentino and it’s fresh and herbal. If some rosé wines feel creamy like Evian then this is Volvic: more rocky and with more edges.
