Tasted for the first time in this vintage, we simply loved everything about this wine. It is very simply made, from the treatment in the vineyard to the natural wild yeast ferment, to the handling in the winery. Marked by dark cherry fruit, sweet leathery notes and fine tannins this is a beautifully balanced wine that really wants to be consumed. L&S (Aug 2011)

The grapes were picked by hand when we determined that the sugar, the acidity and the taste was to our liking. The grapes were crushed and destemmed and placed into a thousand liter open top fermenter. No yeast culture was added so the fermentation was entirely natural. Temperature and nutrient levels were closely controlled and ferment lasted for around ten days. The wine was racked and sulphur dioxide was added after malolactic fermentation was complete to preserve the wine from oxidation. The wine has a deep rich ripe cherry appearance. The aromas are of baked dark cherries, leather and spice. The palate is again dominated by cherries but there is some attractive strawberry characters combined with fine tannins. The wine finishes dry but a balanced acidity helps to lengthen the palate.Winemaker's notes (Aug 2011)
Domaine La Sarabande
Paul and Isla Gordon, who had been making wine the world over for more than a decade, started Domaine la Sarabande in 2009. They were drawn to the region by the schist soils and the old vines, of the classic Mediterranean varieties, Grenache, Syrah, Mourvèdre, Cinsaut and Carignan. As Paul puts it 'we believe these old vines deserve respect'. When they first came to Europe they went to look for a vineyard in Priorat, which has similar vines also on schist, but were put off by the land prices, which would have meant a minimum 20€ price tag on the wine. The vineyard is farmed organically, and the wines are hand-harvested, naturally fermented, and bottled unfined and unfiltered, so as to best express the soils and climate of the vineyard while being technically correct and free of faults - which is perhaps where training in some of the new world wineries gives the Gordons a lead over some of the indigenous growers. We were delighted by the combination of power and delicacy, of complexity along with a clean purity, that the 2010 wines (from only their second harvest) displayed at our introductory tasting.
