Pale green-gold. Bright nose, quite a full, soft palate with a contrasting brightness and focus to the juicy pear and greengage fruit. Very pure and supple, mineral lift, and a long fruit-filled finish. L&S (Dec 2013)

Almonds, hazelnuts, dried flowers, lemon peel and spices meld together in the 2012 Chablis Vaudésir. Rich, open and beautifully textured in the glass, the 2012 impresses for its volume and soft, caressing personality. The 2012 Chablis Grand Cru Vaudesir comes from 2 parcels that altogether make 1.5 hectares, one with a southwest exposure in the middle of the slope and the other consisting of very old vines at the top of the slope. It has a very well-defined, mineral-laden bouquet with hints of lemon curd, fresh lime, and hints of the sea (a salty tang that emerges with time). The palate is well-balanced, a little more rounded than the premier cru. It sports very good weight with subtle peach and nectarine notes that combine on the pure and appealing finish. Gorgeous! Fresh ginger and powdered stone on the nose. Wonderfully silky and fine-grained; in fact full for Chablis but without any undue weight. Broad, ripe flavors of pineapple, ripe pear, white pepper and dusty stone. Plenty of power here but this is a lovely drink right now owing to its rather soft acidity. Domaine Drouhin Vaudon

The Beaune-based merchant Joseph Drouhin has restyled its Chablis Domaine 'Domaine Drouhin-Vaudon' to emphasise its ties with and holdings in (38 hectares) the Chablis vineyard. The Moulin de Vaudon, an 18th Century watermill straddling the Serein River, close to the Grand Cru vineyards of Chablis, is the headquarters and the source of the name. It is the largest estate in Chablis entirely farmed biodynamically.
