Tasted for the first time in this vintage, we simply loved everything about this wine. It is very simply made, from the treatment in the vineyard to the natural wild yeast ferment, to the handling in the winery. Marked by dark cherry fruit, sweet leathery notes and fine tannins this is a beautifully balanced wine that really wants to be consumed.

The grapes were picked by hand when we determined that the sugar, the acidity and the taste was to our liking. The grapes were crushed and destemmed and placed into a thousand liter open top fermenter. No yeast culture was added so the fermentation was entirely natural. Temperature and nutrient levels were closely controlled and ferment lasted for around ten days. The wine was racked and sulphur dioxide was added after malolactic fermentation was complete to preserve the wine from oxidation. The wine has a deep rich ripe cherry appearance. The aromas are of baked dark cherries, leather and spice. The palate is again dominated by cherries but there is some attractive strawberry characters combined with fine tannins. The wine finishes dry but a balanced acidity helps to lengthen the palate.
