Château Aimée

France, Bordeaux

Owned by Phillippe Reich, Aimée is a vineyard of only three hectares, on the classic Pyrenean gravels of the Médoc, with vines that average average around thirty years old. The grapes are hand-picked. The winery is equipped with a sorting table, with the wine made in a combination of stainless steel and concrete vats, with a cold maceration prior to fermentation at 15°C for four or five days under carbonic snow, before a normal fermentation. At the décuvage, the skins are pressed with vertical press.
