There is a lot of wine and a lot of variety in Australia. Perhaps the classic Australian red wine is Shiraz or Shiraz Cabernet, but there is a lot more to it than that. Unencumbered by tradition or too much legality, inquisitive wine makers find new varieties to grow and new places to grow old varieties. Even the Aussie Shiraz is being re-christened as Syrah by wine makers keen to embrace a more subtle style.
