85% in older oak for 13 months. Creamy quince aroma with a hint of orange. Deep and firm and creamy on the palate but still vibrant and mineral. Deliberately made with no new oak, to avoid what Véronique Drouhin calls “the Beaune style”, this comes from two locations within the Grand Cru. It’s a very compact, backward wine with laser-like focus and notes of oyster shell and struck match. Very long and refined. Pale straw-yellow. Ripe peach and honey on the nose. Round, rich and mouthfilling, conveying a seductively glyceral texture without excess weight. Very ripe for the year and sexy in the early going. The Beaune-based merchant Joseph Drouhin has restyled its Chablis Domaine 'Domaine Drouhin-Vaudon' to emphasise its ties with and holdings in (38 hectares) the Chablis vineyard. The Moulin de Vaudon, an 18th Century watermill straddling the Serein River, close to the Grand Cru vineyards of Chablis, is the headquarters and the source of the name. It is the largest estate in Chablis entirely farmed biodynamically.
