Véronique was at pains to re-emphasize that at Drouhin-Vaudon they now use large 500l barrels and no new wood. Gorgeous creamy-soft weight of vinous fruit and richness. Exquisitely pure. Very ripe, and also very bright and lifted. Drinking range: 2021 - 2025 L&S (Nov 2016)

The 2015 Chablis Grand Cru les Clos has developed a subtle marine influence on the nose since I tasted it a few months ago. It is well defined and focused with fresh pear and green apple, though maybe the Vaudésir is prettier this vintage. The palate is sappy and quite saline on the entry, with nicely-judged acidity and a little resinous toward the finish. As I mentioned before, it does not possess the attack of the 2014, yet it should still give another decade of drinking pleasure. Drinking range: 2018 - 2029 Rating: 91 Neal Martin, www.vinous.com (Sept 2017)

Fabulous aromas of stones, apples and orange zest. Full body, great density and wonderful energy. Fruit and everything there. Complexity, too. Drink or hold. Drinking range: 2017 - Rating: 96-97 James Suckling, www.jamessuckling.com (Apr 2017)

All fermented in large old oak (they tried a stainless steel portion but didn’t like it.) Very fine, dense nose - utterly true to fine Chablis. Mouth-filling and very ripe. A big Clos! Flattering and relatively open. Drinking range: 2018 - 2030 Rating: 17 Jancis Robinson OBE MW - www.JancisRobinson.com (Jan 2017)

Domaine Drouhin Vaudon

The Beaune-based merchant Joseph Drouhin has restyled its Chablis Domaine 'Domaine Drouhin-Vaudon' to emphasise its ties with and holdings in (38 hectares) the Chablis vineyard. The Moulin de Vaudon, an 18th Century watermill straddling the Serein River, close to the Grand Cru vineyards of Chablis, is the headquarters and the source of the name. It is the largest estate in Chablis entirely farmed biodynamically.
