Grapes: Merlot 80% - Cabernet Sauvignon 20% Earth: coming from different land mainly clay-limestone and some parcels of muddy sand and rocky sans. Vine: Density : 5,000 plants per hectare Wine making: Depending on the climate of the year, the date of picking is different, but in any case begins as late as possible for a better maturity of the polyphenols. The entire grape is scratched. The vats are used to separate all the patches of parcel by levels of different quality all while being heated at 28°. Quite a long maturing process (3 to 4 weeks) is defined after tasting and in agreement with our oenologue Maturing: The wine rests 12 months in vats with regular withdrawals in order to eliminate the dregs and to add oxygen, a very important element for the good evolution of the wine. Château Belle Garde
The Duffau family have been making Bordeaux at Chateau Belle Garde since 1850. The 46 acres of vines are dotted around on different parcels of land with varying soil types (clay-limestone, clay and gravel and sandy gravel). The majority of the land is situated on the south facing hillside in front of Saint-Emilion. The vines planted for claret are 80% merlot, 10% Cabernet Franc and 10% Cabernet Sauvignon.
Well, OK, not every day but you know what we mean.
