Fermentation in small French oak barrels of 225 litres at a controlled temperature of 18/20°c. the most from the fermentation is kept moving to give the wine the best structure and softness. AGEING AND REFINING At the end of the alcoholic fermentation period the wine is kept in the drums in contact with the fine dregs for 4/5months. Following bottling and refinement of about 3 months. COLOUR Full straw yellow. PERFUME Complex and full of fruit sensations, pear, apple, a touch of vanilla, which blend together in a balanced way. FLOVOUR Consistent structure, elegant, complex aftertaste and persistent. TO ACCOMPANY DISHES Starters, pasta dishes and soups, all types of fish, tasty white meats and carpaccio (thin sliced raw meat).Winemaker's notes(May 2018)
