From a single-vineyard of old vines located in Beine, called Vau de Vey, that is in the process of conversion to organic viticulture. Fermented and aged in a combination of oak and amphorae. Classic Chablis, clean and dry with gentle floral and almond notes. L&S (Feb 2019)

The 2017 Chablis 1er Cru Vau de Vey is the first vintage Mathias has produced from this newly acquired parcel, and the vines are in organic conversion. The slope is steel and prone to erosion, so a lot of the vineyard work has to be done by hand. Offering up notions of grapefruit, green apple, Meyer lemon and almond paste, it's medium to full-bodied, satiny but tensile, with a racy spine of acidity, good tension at the core and an elegantly chalky finish.
