This was tasted after trawling through many a Gredos Garnacha when last in Madrid, and this little unassuming wine stole the show. The very charming Aitor and winemaker David are making ethereal styles of Garnacha from this little-known pocket in Toledo, just outside of Madrid, very much in the Gredos Garnacha mould. This is elegant and fine with a lovely weight of fruit behind it, and a refreshing backbone of acidity. Lovely red fruit flavours - think macerated strawberries, rhubarb and rose petals - and very fine tannins, this is much smarter than the modest price tag would have you believe. Organically farmed and only 5,000 bottles made of this, their second ever vintage - this is a treat both slightly chilled in warmer weather dining alfresco, or hunkered down when the barometer drops. 100% Garnacha farmed organically by Aitor Paul, sommelier at Lavinia in Madrid, and winemaker David Villamiel. Made from 40- to 50-year-old bush-vine plots on granite soils in Toledo and Aldea del Fresno. Smells like edge-of-woodland strawberries on a late summer afternoon – strawberries that have been warming in the sun for hours, and now they smell of cinnamon. So sweet, but not jammy, carrying the scent pine needles and mushrooms, an undertow of cool earth. A startlingly transparent wine which seems to ‘be’ in your mouth with a dewdrop stillness that explodes into juice. A purity of fruit framed by tannins that taste and feel like long strips of wet bark taken from old birch trees – silvery white and delicately scarred texture. A stunning wine. I tasted the bottled version of the 2018 A Dos Manos, the Garnacha from Méntrida on degraded granite soils, and it delivered what the unbottled sample promised last year. It's a ripe Garnacha at 14.5% alcohol, with fully developed flavors and aromas, red berry fruit, herbs and aromatic spices. It's elegant, medium-bodied and almost ethereal with aerial tannins and inner energy. It's not really from Gredos but has more Gredos character than many... 5,000 bottles were filled in July 2020. A Pie de Tierra

We were introduced to Aitor from A Pie de Tierra by Roberto Olivan from Tentenublo when in Madrid - already a promising start. Aitor and David are making some incredibly fine expressions of Garnacha from these old vine plots in Toledo and Aldea del Fresno - incredibly ethereal and pinoté styles, made very much in the image of Gredos Garnacha. The vines for their benchmark 'A Dos Manos' are 40-50 years old, sitting on David's family farm. The age of the vines, paired with the granite soils here, result in a delicate yet powerful expression of Garnacha.

Aitor and David work organically, and inspired by the esteemed wines of Commando G, where David did a stage before making his own wines, these are very exciting wines A very young project, with this only their second vintage, we cannot wait to see what comes next.
