Our Vermentino blends with our young Roussanne, bringing together the expression of our Combettes and La Ciaude limestones. With a limpid robe that tends towards green gold, the wine is both tense and round with saline and smoky tones, flint, fennel, chamomile, hawthorn and white fruits. Harvested at full maturity around mid-September, its controlled alcohol and excellent acidity make it sapid and easily digestible. A nice choice of grape variety for Cazelles鈥 pure elegant wine.

Anne Gros and Jean-Paul Tollot (Domaine Tollot-Beaut) have taken over some wonderful vineyards in the Minervois, and brought Burgundian savoir-faire to an area which all too often produces sweet or leaden-footed lumpen wines. These wines have a style of lively freshness which is so uncommon anywhere in Languedoc-Roussillon. We were bowled over by their drinkability, and feel they offer so much in terms of character and flavour, while remaining easy to approach, mineral and light of touch.
