All destemmed as usual, and vinified in barrel ('vinification intégrale'). On the red fruit spectrum, taut and fresh, very 'Volnay' in the sense of the classic generalisation. Mouth watering, it has a lovely appetising balance. Not massive, but the concentration is there, which shows in the length. Drinking range: 2027 - 2038 L&S (Nov 2024)

: (from 25+ year old vines). An elegant, pure and airy nose is beautifully layered with its mix of spicy red and black pinot fruit aromas. The mouthfeel of the middle weight flavors is markedly finer, indeed the word finesse springs to mind, and particularly so on the stony, detailed and well-balanced finale. A wine of lace and grace. The 2023 Volnay Les Chevrets 1er Cru is a plump, juicy wine. Blue/purplish fruit, spice, new leather, licorice and lavender are all dialed up. This is one of the more immediate Volnays in the range. A fine crimson purple. A little fresher than the Frémiets, with pure red fruit, cherry and raspberry, a little more mouthfilling, stays youthful all the way through, very well mastered, an impressive Chevrets. Drinking range: 2029 - 2034 Rating: **** Jasper Morris - Inside Burgundy (Dec 2024)
Domaine Henri Boillot
A domaine which dates to 1885, but which began properly in the early years of the 20th century under the current Henri's grandfather (also Henri). His son, Jean, was the one who really developed it. Henri arrived in 1975 and worked his way up, becoming the winemaker. In 2000 he began the building of the new winery at the bottom of Meursault, and he then bought out his brother and sister to keep the domaine as one, renaming it from 'Domaine Jean Boillot' to 'Domaine Henri Boillot' to avoid confusion with his brother Jean-Marc's domaine.
The Domaine totals around 14 hectares, with roughly equal surfaces of red and white, and of which just under 4ha is the Monopole vineyard of Clos de la Mouchère, a walled enclave within the premier Cru Puligny Perrières. The 2017 vintage saw the arrival of two new parcels of Grand Cru red, in Échezeaux and Latricières Chambertin
