80% Pinot Noir, 20% Chardonnay. Mass selection old vines from nine different plots. Vinified in small stainless-steel tanks. Base wines from 2016 to 2018. 42 months sur lattes. Dosage 5 g/l.
Light aromas of bakery, lemon cupcake, perhaps. But a bit more complexity on the palate. Lime-zested pears and a tiny bit of dried dill and tarragon giving a sense of green spice. Nice mousse. Clipped but not harsh. Actually reminds me of a very nice kohlrabi slaw with orange juice – which probably doesn't sound nearly as good as it tastes.

The NV Brut Mes Favorites Vieilles Vignes is a blend of 75% Pinot Noir and 25% Chardonnay taken from ten lieux-dits in Mareuil. Rich, creamy and ample in feel, Mes Favorites offers a beguiling mix of old-vine intensity wrapped around a core of bright acids. Kirsch, dried flowers, mint, spice and pear build as this showy, inviting Champagne offers a warm embrace. Dosage is 5 grams per liter. Disgorged: January18, 2022. Old vines and low yields seem to give an impression of age and depth in this wine, even if there are no old reserves and no oak here. Full of dried pear, ginger and sweet grapefruit peel, complex with spiced apple tart and brown bread toast, this is saturated with flavour and detail but not at all heavy; superb value. 80% Pinot Noir and 20% Chardonnay from old vines in Mareuil-sur-Aÿ in the Vallée de la Marne. 50% each from the 2019 and 2018 vintages. Champagne Marc Hébrart

Marc Hébrart started making his own Champagne in 1962, and the domaine is now run by Jean-Paul, who took over in 1997. Jean-Paul tries to add to the family holdings every year, believing that even at current prices it's still a good long-term bet. He's currently running 16 hectares, 8 ha of Pinot in Mareuil-sur-Aÿ, Chardonnay in Oiry, Avize, Chouilly and Cramant, and more Pinot in Louvois and Aÿ - as well as the Clos le Léon in Dizy: in total 80 parcels in 11 villages.

The vineyards are farmed sustainably, with as little input as possible. Vinification is by parcel to give the widest possible palette when it comes to blending, and or course allowing for single-vineyard releases like the Clos Léon, a rare walled Clos in the village of Dizy. Most of the Champagnes are made in stainless steel, but since 2004 there has been a barrel-fermented cuvée which blends some of his Chardonnays on the Côte de Blancs with some of his best Pinot Noirs to the north of the Marne - 'Rive Droite-Rive Gauche'.
