Simon was unsure of the style of wine he wanted to make with the Roussanne vines he purchased, but has been so impressed with the results that he has gone on to plant further small parcels. Extended lees contact and regular battonage, for about a month, give a wine that is fleshy with nice intensity, honey, wild flowers and stone fruits. The palate has great texture, rich apricot, wild flowers, aromatic herbs and a nice stony minerality on the long finish. Drinking range: 2016 - 2020 L&S (Oct 2016)

A pure and elegant interpretation of the Rhône's Roussanne grape – typical of Lea & Sandeman's style of wine, rather than of Languedoc. It combines gentle floral characters with a mineral core and bright acidity. Rating: 87 www.thewinegang.com (Apr 2016)

The transition from IT to viticulture is not a path well-trodden, but after working and loving a number of harvests in his youth, Simon Coulshaw decided that it was the path he was going to walk. The wines from Domaine des Trinités are a true reflection of the passions of their maker and his interest in terroir and local varieties.
The property is roughly divided by 15 hectares falling into the AOC Faugeres appellation, producing elegant and spicy wines, and the remaining 9 hectares in AOC Pézenas Coteaux de Langeudoc, where the wines are full of fruit.
