This gorgeous and intriguing wine is Simon 'The Coulsh' Coulshaw's take on the classic Côte-Rôtie blend of Syrah - with about 5% Viognier. He only makes this in exceptional vintages when the Syrah and Viognier grapes ripen in perfect harmony with each other. The blend is dominated by his very old Syrah vines, high up on the schistous hills of Faugeres. Ideal terrain for the purest expression of Syrah. This has both grace and brood, both poise and deep lines of fruit and minerality. Freshness and perfect ripeness too. A brilliant, balanced and intensely satisfying wine. I put this glass of wine to my nose, and had I not been firmly anchored to a chair, would have taken five steps back. The aroma swept me off my feet. Indescribable. Wild. One Thousand and One Nights distilled into a glass. Heady and exotic and riddled with rose petals and spice and coiled with riddles and one sniff of this is poetry and myth and folklore and kitchen table and campfire and someone's cigarette stubbed out at 3 am in lonely finality. Garrigue-spiced aromatics spiral through rock, plant, seed, flower with dazzling complexity. One moment it's rose petals, so delicate you could brush a baby's lips with it; the next it's hot tar, underground angry, rocks shifting deep in the cracks of the earth. This is a velvety, cocoa-dusted, amped-up-then-restrained, dark-horse beauty. Vertical, dark, slub-silk fruit with overtones of tamari and dark chocolate, crushed coffee beans and sweet forest-floor earth. Long and the kind of wine that coils around you slowly, sinuously, sensuously. Worth every penny. Domaine des Trinités

The transition from IT to viticulture is not a path well-trodden, but after working and loving a number of harvests in his youth, Simon Coulshaw decided that it was the path he was going to walk. He worked as hard as he could in the upper tiers of corporate IT with the simple goal of amassing just enough cash so that he could live his dream, his calling, of being a winemaker and having his own vineyards. The wines from Domaine des Trinités are a true reflection of the passions of their maker and his interest in terroir and local varieties.

You will rarely meet someone so clearly passionate about farming and nature - he communicates so well the details of bio-dynamics and organic farming and can talk for hours without ever sounding like a zealot or a preacher. Fabulous man, making fabulous, expressive wines.

The property is roughly divided by 15 hectares falling into the AOC Faugeres appellation, producing elegant and spicy wines, and the remaining 9 hectares in AOC Pézenas Coteaux de Langeudoc, where the wines are softer and more fruit forward - but still tell the story of where they are from - it is this crucial aspect that is so strong with these wines - their sense of place.
