‘Nose is gorgeous. Warm bowls of summer fruit. Violets too and Hawthorne. The fruit is soft and pretty. A measured, nicely balanced core of dark hedgerow fruit is sappy and appealing - but there is a delightful note of gentle menace this year - more dark lines, a more meaty and savoury line underscores the 2019. Deeply satisfying - no firm bits no hard edges - this has such a pretty feel on the palate. There is something so pure about it and yet there is just enough dark bite amongst the soft, easy fruit profile to keep it surprisingly serious.’ L&S (Jan 2021)

Supple elegant and gently spicy, this is from seriously old vines that Simon has managed to save. Garrigue herbs, red fruits and a touch of blueberry, creamy but with rich tannin backing the fruit, it is sleek and delicious. Drinking range: 2020 - 2023L&S (Sept 2020)

This 'natural' wine proves Simon Coulshaw's move from IT to winemaking was a solid choice. With 90% ancient-vine Cinsault and 10% Syrah, it boasts a musky raspberries, linear fruit tannins and whiffs of pepper, dried herbs and hot stones. Rating: 90 Tina Gellie - Decanter (Jan 2021)

Natural wine from Simon Coulshaw: no cultured yeast, enzymes, chemical tannins or fining product. 90% old-vine Cinsault, 10% Syrah. I was instructed to chill this a bit before tasting. It was in the fridge for about 25 minutes and then left out for 10 minutes before tasting. Fresh red-berried nose. Hurrah! Here is another Languedoc producer who 'gets' Cinsault. Perky, bright, raspberries and with that lovely telltale Cinsault salty-sweet tang that always reminds me of the best prosciutto or jamon. A bit of white pepper and ground cumin tangled into feather-light sinews of tannin. This is absolutely YUM. Tapas/aperitivo wine, without a doubt. I could drink this all summer long. Domaine des Trinités

The transition from IT to viticulture is not a path well-trodden, but after working and loving a number of harvests in his youth, Simon Coulshaw decided that it was the path he was going to walk. He worked as hard as he could in the upper tiers of corporate IT with the simple goal of amassing just enough cash so that he could live his dream, his calling, of being a winemaker and having his own vineyards. The wines from Domaine des Trinités are a true reflection of the passions of their maker and his interest in terroir and local varieties.

You will rarely meet someone so clearly passionate about farming and nature - he communicates so well the details of bio-dynamics and organic farming and can talk for hours without ever sounding like a zealot or a preacher. Fabulous man, making fabulous, expressive wines.

The property is roughly divided by 15 hectares falling into the AOC Faugeres appellation, producing elegant and spicy wines, and the remaining 9 hectares in AOC Pézenas Coteaux de Langeudoc, where the wines are softer and more fruit forward - but still tell the story of where they are from - it is this crucial aspect that is so strong with these wines - their sense of place.
