Disgorged as an extra-brut with 3.5 grams per liter of dosage, the 2019 Extra-Brut Blanc de Noirs Grand Cru Noces de Craie reveals a ripe, pure bouquet of spices, white flowers, ripe orchard fruits and pastry. Medium to full-bodied, rich and vinous, it has a fleshy core of fruit, bright acids, a pinpoint mousse and a saline, delicate mid-palate, concluding with a long, delicately bitter, gastronomic finish. Jean-Paul Hebrart crafted this blanc de noirs cuvée first from the 2012 harvest, and he makes it only in the very best of Pinot Noir years. The 2019 iteration is one of very finest yet, a year when Grand Cru Aÿ lieux-dits Cheuzelles, Longchamps, Pierre Robert, Pruche and Chauffour made it to the blend. Brightly shiny, pristine fruit on the expressive nose, all on vibrant red fruit. On the palate, it holds back some more, bringing forward its impeccable concentration and built-to-last structure. Champagne Marc Hébrart

Marc Hébrart started making his own Champagne in 1962, and the domaine is now run by Jean-Paul, who took over in 1997. Jean-Paul tries to add to the family holdings every year, believing that even at current prices it's still a good long-term bet. He's currently running 16 hectares, 8 ha of Pinot in Mareuil-sur-Aÿ, Chardonnay in Oiry, Avize, Chouilly and Cramant, and more Pinot in Louvois and Aÿ - as well as the Clos le Léon in Dizy: in total 80 parcels in 11 villages.

The vineyards are farmed sustainably, with as little input as possible. Vinification is by parcel to give the widest possible palette when it comes to blending, and or course allowing for single-vineyard releases like the Clos Léon, a rare walled Clos in the village of Dizy. Most of the Champagnes are made in stainless steel, but since 2004 there has been a barrel-fermented cuvée which blends some of his Chardonnays on the Côte de Blancs with some of his best Pinot Noirs to the north of the Marne - 'Rive Droite-Rive Gauche'.

R and L LEGRAS Blanc de Blancs Brut Grand Cru, Chouilly: A gossamer-light, elegant Chardonnay. It is so highly respected it serves as the house Champagne for the legendary Tour d Argent.
2019 NOCES DE CRAIE Extra Brut Grand Cru, Marc Hebrart: A magnificent, concentrated 100% Pinot Noir sourced from an incredibly rare massal selection in the commune of Ay.
GONET-MEDEVILLE Tradition Brut 1er Cru NV: A beautiful, atmospheric grower Champagne. It features 70% Chardonnay from the sunny, south-facing slopes of Bisseuil, made with zero filtration or malolactic fermentation.
SHAMAN 21 Brut, Champagne Marguet NV: A radically clean, generous blend from Ambonnay. It is grown biodynamically by a family who work their Grand Cru soils with horses.
