A blend of 60% Grenache, 30% Syrah and 10% Carignan. What a revelation this wine is. The wild intense nose has good meaty savour thrown in with the attractive dark berry fruit. And then the palate has great bounce! Despite the dark and nice brood to the fruit - this has an unmistakably mineral, slightly graphite note to it. A fresh and crisp, crunchy edge to the dark fruit, It flows well all the way to the good, bright finish. Herbs and lavender. Focused and angular. Freshness is a key aim and Simon is completely successful to this end! With a meaty Pork Chop or grilled Aubergine this will be a total delight. L&S (Jul 2020)

Simon Coulshaw makes natural wines: no cultured yeast, enzymes, chemical tannins or fining product and farming with respect to the environment, although the domaine isn't certified organic. 60% Grenache, 30% Syrah, 10% Carignan. Dark cherries and a sharp flash of cobbler's glue on the nose. Rich layers of mulberries and prune, coffee syrup, clove and burnt sugar, mushrooms and leaf mulch. You could not accuse this of simplicity, although it has more depth than length. A little brooding, a little heat, and slow to build. The tannins seem to be more spice than texture, vibrating more than gripping. If there is grip, it's in the orange pith and peel-oil on the finish. Intriguing wine... Domaine des Trinités

The transition from IT to viticulture is not a path well-trodden, but after working and loving a number of harvests in his youth, Simon Coulshaw decided that it was the path he was going to walk. He worked as hard as he could in the upper tiers of corporate IT with the simple goal of amassing just enough cash so that he could live his dream, his calling, of being a winemaker and having his own vineyards. The wines from Domaine des Trinités are a true reflection of the passions of their maker and his interest in terroir and local varieties.

You will rarely meet someone so clearly passionate about farming and nature - he communicates so well the details of bio-dynamics and organic farming and can talk for hours without ever sounding like a zealot or a preacher. Fabulous man, making fabulous, expressive wines.

The property is roughly divided by 15 hectares falling into the AOC Faugeres appellation, producing elegant and spicy wines, and the remaining 9 hectares in AOC Pézenas Coteaux de Langeudoc, where the wines are softer and more fruit forward - but still tell the story of where they are from - it is this crucial aspect that is so strong with these wines - their sense of place.
