Musky peach and crushed rock tones combine with lemon oil and spice as the 2023 Etna Bianco Mofete evolves in the glass. Sweetly focused, this cascades across the palate with ripe orchard fruit as a savory saline tinge emerges toward the close. It tapers off clean and fresh with a tactile mineral resonance. Good fruit purity, supple easy going, citrus and wild flowers, good acid balance, with some grip and depth on the finish.L&S (Apr 2025)

Full bottle 1,292 g. 70% Carricante, 30% Catarratto from Contrada Santo Spirito, Passopisciaro. North-facing vineyard, bush vines trained up chestnut poles, 30 years old. Hand-picked end of September. Spontaneous fermentation in stainless steel, then four months in stainless-steel tanks on fine lees and two months in the bottle. White flowers and apples, lemon rind and rock pools. You can taste the wind and the spaces in this arms-flung-wide wine. You can taste tiny flowers lodged in rock cracks, and if you've hiked cliff paths you'll know what it tastes like to scoop cold, clear rain water from a shallow basin of granite into your mouth and taste lichen and salt and samphire. Palmento Costanzo

A property of 14 hectares in Contrada Santo Spirito, Passopisciaro, on the northern slopes of Etna. 10 hectares are planted with vines on walled terraces on volcanic rocks between 600-800 metres altitude. The Costanzos came here in 2011 - they are from Catania - and meticulously restored the palmento (the word for the olive millstone which gave the farm its name). The vineyards are planted employing the ‘gobelet' method and farmed organically. The 2017’s are certified organic. This is an amazing new project which has been given all the investment and attention it needed to make great wines from the outset.
