One-third each Chardonnay, Pinot Noir and Pinot Meunier from Festigny and Le Breuil. Vines around 38 years old. Organic and biodynamic farming (not certified). Hand-picked, stainless-steel fermentation, wine aged one year in oak tuns. No malo. Tirage in July 2017, disgorged July 2022. No dosage. Sweeter on the nose than their other two ADN de Foudres. Sour cream and orange zest. Very silky, lactic, long streaks of cinnamon and nutmeg, and, for the first time in this grower tasting, a touch of shortbread. Dried lavender flowers shape a grace note on the finish. Then hazelnut tucked tiny into every minute bubble. This is really, really good. Has a honeyed, languid clockwise wind around the mouth, feeling like a wine gently ticking a slow, timeless beat that you can feel in the deepest part of your throat. The NV (2015) Brut Nature 3 Cépages ADN de Foudre is terrific. The equal blend of Chardonnay, Pinot Noir and Meunier is super, with each terroir seeing individual vinification in foudres prior to blending. Dried flowers, pear, chamomile and spice abound. Pear, lemon confit and marzipan all grace this exquisite, impeccably balanced Champagne. Zero dosage. Disgorged: May 12, 2023. Terroir Harvest Manually harvested with careful monitoring and control of grape maturity. We use two pneumatic presses, 2 000 and 4 000 kgs capacity.

Tasting A beautiful shimmering hue, with elegant highlights, delicate and persistent ring of bubbles. Very clean and delicate nose, with subtle woody notes. Unctuous and round mouth, with toasted almond flavours

Champagne Christophe Mignon

Christophe Mignon is a fifth generation vigneron working in the Marne valley on 6.5 hectares of vines between Le Breuil and Festigny, with his wife Laurence and Loann, one of their two sons. Although a small domaine there are still around 30 different plots helping to give complexity to the wines, which, apart from a small cuvée of Blanc de Blancs, are all pure Pinot Meunier.

Christophe believes in working alongside nature as he perceives it even if this turns out to be the harder way. Although not certified, his commitment to biodynamic, homeopathic and geobiological farming clear to see on any visit.

Having harvested the ripest fruit possible, the grapes are pressed quickly and fermented slowly, with no malolactic, nor filtration, and very limited SO2. The wines that result are very dry (he does some cuvées with no dosage) and rather dramatic, even quite extreme.
