100% Meunier with 12% red wine. 45-year-old vines. Organically and biodynamically farmed and produced. They want something more fruity, so have given this wine 4 g/l dosage. 50% 2017, 50% 2018. No malo. Tirage in 2019, and disgorged February 2022.
Quite a deep colour. Like cherry sherbet. Deceptively playful – it may be loaded with fruit but there is textural and structural complexity up to the rafters of this wine. Loaded with sour cherry and damsons and raspberry and plenty of lemony acidity. Blood orange, dried orange peel and tobacco spice. A meaningful, generous, expansive wine with room to lean into, but also giving room for thought.

Biodynamic farming (although not certified). Low added sulphites. 100% Meunier from Festigny and Le Breuil. 50% 2017, 50% 2018. Bottled 2019. Dosage 4 g/l. As zappy and brisk as their Brut Nature. Rowanberry red and tart and pert and smart. Herbal underlines. Rowanberry tannins. Tiny bit stony at heart but crackling with energy. Those bubbles are small but they bite! The NV Extra Brut Rosé ADN de Meunier is a classic—layered and supple with rose petals, mint, dried cherry, mint, spice and orange peel. Assembled with the inclusion of 10% still red Meunier, the Rosé is exquisitely nuanced and super expressive, offering great depth and tons of personality. This is gorgeous. Terroir Harvest Manually harvested with careful monitoring and control of grape maturity. We use two pneumatic presses, 2 000 and 4 000 kgs capacity.

Vinification Tasting Warm salmon color, with elegant ruby reflections, delicate and persistent ring of bubbles. Fruity, powerful and generous nose, with lychee, raspberry and cherry. Very fresh, vital and elegant on the palate, with orange and strawberry flavors. Ends with silky and energetic finish. Divided into plots. Stainless steel or enamelled steel tanks. No malolactic fermentation

Champagne Christophe Mignon

Christophe Mignon is a fifth generation vigneron working in the Marne valley on 6.5 hectares of vines between Le Breuil and Festigny, with his wife Laurence and Loann, one of their two sons. Although a small domaine there are still around 30 different plots helping to give complexity to the wines, which, apart from a small cuvée of Blanc de Blancs, are all pure Pinot Meunier.

Christophe believes in working alongside nature as he perceives it even if this turns out to be the harder way. Although not certified, his commitment to biodynamic, homeopathic and geobiological farming clear to see on any visit.

Having harvested the ripest fruit possible, the grapes are pressed quickly and fermented slowly, with no malolactic, nor filtration, and very limited SO2. The wines that result are very dry (he does some cuvées with no dosage) and rather dramatic, even quite extreme.
