Saten Blanc de Blancs, 40 months on lees and 4.5g dosage. Stone fruits, yellow plums, some lovely creamy autolytic notes of baked bread and pastry undercut with citrus and a delicious gentle roundness. L&S (Sept 2024)

Tasting-note: 'Straw-yellow colour and fine perlage. The wine has a delicate floral fragrance. The taste is soft and delicately creamy, nuanced but distinct scent of ripe fruit, accompanied by subtle hints of white flowers and nuts, or roasted (almonds or hazelnuts), pleasant savour and freshness that fuse with a natural smoothness that recalls the delicate feeling of silk.'
Aging: Bottle ageing on lees for a period of 36 months in cellars at the constant temperature of 12-15 °C.
Food-paring: Great with aperitifs and throughout the meal. It will perfectly go with main and second courses based on fish and vegetables, raw fish, fried fish and vegetables, mixed cold pork meats, white meat, and ripe cheese. Serving temperature: 6 °C (44 °F)
Winemaker's notes (Nov 2024)

100% Chardonnay. Three years on the lees, only four bar of pressure because less sugar is added for second fermentation in bottle (18 v 24 g/l). RS (residual sugar) 4 g/l. Gentle lemon and pear aroma. Soft, gentle yet fresh. A subtle style. (Satèn means silky, apparently.) Chalky texture. Great subtlety here but plenty of flavour and finesse. Corteaura

Federico Fossati, the “Soul of Corte Aura”, is not yet 40 but already taking on a second career - with great results!. He left his homeland of the Veneto and a career in finance to set up in Lombardy. He saw his future in Adro, Franciacorta. Prime growing grounds for classic, high quality fruit, perfect for Franciacorta. The towns emblem is made up of three bunches of grapes - this is what they do there!

We are delighted to be working with the team here - it is so refreshing to have people making great Sparkling wine - who really understand that as it is not labelled Champagne - there is work to be done to raise the profile of Franciacorta and they know prices must be part of the allure - these represent seriously good value and we are so pleased to be listing the Brut, the Rosato and the fantastic Pas Dosé cuvée - perfect adverts for what is achievable here in this historic region - with passion, attention to detail and a long-term plan.

They own many of their own vineyards as well as buying in grapes from trusted growers and although still quite young are becoming seriously respected in the area.

There is something properly magical about an Italian Christmas. It’s less about the panic of the roast and more about the flow, a long, joyous procession of courses where the wine and food keep arriving in perfect rhythm. We created this mixed case to capture that feeling, curating a Grand Tour of Italy's most famous regions to provide the perfect bottle for every stage of your festive day.
L’Aperitivo: You don't start with Champagne here; you start with Franciacorta. We’ve included the Corteaura Saten Brut'Saten' means silk, and this delicately creamy blanc de blancs is the ultimate elegant welcome.
I Primi (Starters & Pasta): For the seafood antipasti, enjoy the sleek Grechetto from Tenuta di Salviano or the complex, orange blossom scented Vermentino from Fattoria di Magliano. When the pasta arrives, reach for the 2023 Poggerino Chianti Classico with its meaty cherry notes, or the flagship Dolcetto 'Papà Celso' from Marziano Abbona, a wine joyously loaded with red fruits.
I Secondi (The Main Event): For the roast, we have the heavy hitters. The 2021 Barolo from Andrea Oberto offers classic tarry notes and gorgeous fragrance, while the 2022 Le Macchiole Bolgheri Rosso brings a touch of Super Tuscan glamour with its rich sandy tannins.
Il Dopocena (Meditation): To finish? The stunning 2018 Amarone Classico from Ca' La Bionda. Energetic yet intense with a smoky blend of peppery spices, it is the perfect wine for the cheese board or quiet reflection by the fire. Buon Natale!
