Flavors of ripe green apple, poached quince, clementine and pickled ginger are chiseled by racy acidity and a swathe of chalky minerality in this sculpted Champagne. This softens its firm definition with a refined, satinlike mousse that carries the flavor profile. Offers hints of almond blossoms and pink grapefruit pith on the zesty finish. Bright yellow/green , the 2016 Champagne 1er Cru Clos de Leon Brut was aged and fermented in 300-liter used barrels and is entirely Chardonnay from Dizy. The nose opens to notes of fresh baguette, pear, lemon balm, and savory salinity. Medium to full-bodied, it’s potent and concentrated, with a coiled feel, good ripeness, and a clean finish. The mousse does not interfere and gently frames the wine on the palate. It’s long on the finish and quite impressive, with a rounded silky texture. Bravo. Drink over the coming 15 or so years. This Dizy plot near the Marne canal is dear to Marc Hebrart. Exposed south on a chalky terrain, the massal-selection vinesyield a concentrated crop of ripe grapes. As opposed to most of the range, this wine is born and raised in oak, and preservation ofthe natural malic acid in the wine adds to its briskness and vibrancy. The nose impresses, with heaps of spice-laden fruit andfinely integrated oaky notes. On the palate, too, the overall impression is one of bold savouryness. Chewy, rich and ripe, this islaudably free of any oxidative tendencies and can be kept long into the future. The 2016 Brut Clos Le Léon, 100% Chardonnay from Clos Le Léon in Dizy, is airy and gracious in feel. Lemon peel, tangerine oil, mint, crushed rocks and sage give the 2016 its effusive personality. This understated Champagne is impeccable in its balance. This was raised in oak barrique and saw no malolactic fermentation. Dosage is 3 grams per liter. Champagne Marc Hébrart

Marc Hébrart started making his own Champagne in 1962, and the domaine is now run by Jean-Paul, who took over in 1997. Jean-Paul tries to add to the family holdings every year, believing that even at current prices it's still a good long-term bet. He's currently running 16 hectares, 8 ha of Pinot in Mareuil-sur-Aÿ, Chardonnay in Oiry, Avize, Chouilly and Cramant, and more Pinot in Louvois and Aÿ - as well as the Clos le Léon in Dizy: in total 80 parcels in 11 villages.

The vineyards are farmed sustainably, with as little input as possible. Vinification is by parcel to give the widest possible palette when it comes to blending, and or course allowing for single-vineyard releases like the Clos Léon, a rare walled Clos in the village of Dizy. Most of the Champagnes are made in stainless steel, but since 2004 there has been a barrel-fermented cuvée which blends some of his Chardonnays on the Côte de Blancs with some of his best Pinot Noirs to the north of the Marne - 'Rive Droite-Rive Gauche'.
