ALCOHOL: 12% DOSAGE: 5.7g/litre LEES AGEING: 30 months DISGORGED: February 2023 MALOLACTIC: 100% FERMENTATION: First in stainless steel tanks, second in bottle with champagne yeast. PROCESSING: Whole bunch pressed and naturally settled for 24 - 36 hours. Tasting Note “A fresh nose bursting with orchard fruits, ripe apple, quince and white peach with notes of jasmine and a hint of freshly baked bread. Wonderful creaminess on the palate with a breadth of red apple fruit and brioche with a citrus streak, and a long, clean, lively finish
Squerryes
‘Licet Esse Beatis’: it is permitted to be joyful. This motto, that adorns the doorway to the Squerryes Estate, could not be more fitting of the wines.
From this corner of the North Downs, often overlooked in winemaking with the more famous South Downs stealing the limelight, the Warde family first noticed the potential in the estate and planted vines here in 2006. A geological survey had confirmed that the chalk escarpment had qualities similar to the esteemed 'Côte des Blancs' region of Champagne.
The only use their own grapes, and the base wines that are blended into the cuvée are aged for the lees for extended periods, creating incredible complexity in the wines.
The wines are extremely smart and beautifully complex, offering masses of autolytic layering with a gorgeous line of fresh acidity.
