100% Pinot Noir from a single parcel in Le Breuil called La Brousse where they have diseased vines producing some very beautiful bunches of grapes with tiny berries and great concentration. South-south-west-facing plot of 45-year-old vines, farmed along biodynamic principles (not certified) and according to lunar cycles. Hand-picked. Pneumatic press. Vinification in stainless steel. No malo. Aged eight months in oak tuns and five years sur lattes. Tirage in 2018. Disgorged January 2023. Dosage 0 g/l.
Like the ADN de Foudre Meunier, the nose on this is very much in the red-berry spectrum: sweet, succulent strawberries and raspberries. Creamy but also with a rather delicious pan-warmed cumin and spelt savouriness. Real generosity of fruit but the acidity chisels deep grooves of structure into the richness. Develops pistachio nuttiness through the palate, building into the finish. Satin bubbles. Quiet pulse of energy and life. These Mignon wines are distinctive, unique, and a little bit special. Harvest Manually harvested with careful monitoring and control of grape maturity. We use two pneumatic presses, 2 000 and 4 000 kgs capacity.

Tasting A beautiful shimmering hue, with elegant highlights, delicate and persistent ring of bubbles. Very clean and delicate nose, with subtle woody notes. Powerful mouth with hight precision, very fresh with toasted almond flavors. Winemaker's notes (Jan 2023)
Champagne Christophe Mignon
Christophe Mignon is a fifth generation vigneron working in the Marne valley on 6.5 hectares of vines between Le Breuil and Festigny, with his wife Laurence and Loann, one of their two sons. Although a small domaine there are still around 30 different plots helping to give complexity to the wines, which, apart from a small cuvée of Blanc de Blancs, are all pure Pinot Meunier.
Christophe believes in working alongside nature as he perceives it even if this turns out to be the harder way. Although not certified, his commitment to biodynamic, homeopathic and geobiological farming clear to see on any visit.
Having harvested the ripest fruit possible, the grapes are pressed quickly and fermented slowly, with no malolactic, nor filtration, and very limited SO2. The wines that result are very dry (he does some cuvées with no dosage) and rather dramatic, even quite extreme.
