Enticing aromas of toast, butter, ripe apple, citrus and nut. The palate is pure and crisp with complex layered, citrus, nut, bread and malt notes, all finished off with a brisk bright acidity that gives great length. Smart champagne blend of 80% Chardonnay, 20% Pinot Noir. This spends 50 months on the lees in the cellar. L&S (Oct 2016)

This 80% Chardonnay and 20% Pinot Noir blend has 50 month ageing. Plenty of rich, nutty autolytic characters. Notes of marzipan. It is creamy and full, quite firmly structured, with a delicious dry finish. Rating: 18 Sarah Marsh MW, The Burgundy Briefing(May 2020)
Pronounced red-cherry and bruised-peach aromas here – somewhat surprising for having only 10% more Pinot than the Brut plus having a long 60 months on lees. Spicy, coffee and toast notes emerge from the time on lees, complementing the fruit core. Fruit and lees richness fills out the mid palate and balances the absence of dosage, though a flinty mineral streak pushes through the finish. 80% Chardonnay, 20% Pinot Noir. 50 months on the lees. This shows a more leesy aroma than the straight brut but it's still the fresh lemon fruit that dominates. A little creamier on the palate, very precise and dry on the finish. There's a more mealy, savoury quality on the finish, giving greater complexity. Not expensive given the time on the lees. Federico Fossati, the “Soul of Corte Aura”, is not yet 40 but already taking on a second career - with great results!. He left his homeland of the Veneto and a career in finance to set up in Lombardy. He saw his future in Adro, Franciacorta. Prime growing grounds for classic, high quality fruit, perfect for Franciacorta. The towns emblem is made up of three bunches of grapes - this is what they do there!

They own many of their own vineyards as well as buying in grapes from trusted growers and although still quite young are becoming seriously respected in the area.
