The hand-picked harvest goes through a short prefermentary maceration before being vinified. For the duration of the 18-20 day vatting period, the wine is kept at low temperature. It is then matured in oak barrels for 14 to 16 months, in nineteenth century vaulted cellars which provide ideal conditions for raising wines. The proportion of new oak, which is susceptible to variations according to the vintage, represents on average two thirds of the cuvée. The barrels come from high-quality barrel makers and have been rigorously selected for their fine grain and light toast. Winemaker's notes (Mar 2017)

A spicy, fresh and mildly exotic nose of tea, wild red berries and plenty of pungent earth gives way to more obvious mineral-inflected flavors that possess a taut muscularity on the balanced, understated and attractively persistent finish. Domaine Faiveley

The Faiveley family are the largest vineyard owners in Burgundy, owning around 120ha, spread across the Côtes de Nuits, Beaune and Chalonnaise and encompassing everything from generic Bourgogne up to the grandest of Grand Crus. Their holdings supply the grapes for 5 out of every 6 bottles made by Faiveley, the balance being bought in from carefully selected contract growers.
