(aged in 50% wood). A restrained, cool and more elegant nose features notes of mineral reduction, oyster shell and ocean breeze. The racy and beautifully well-delineated middle weight flavors deliver excellent persistence on the clean, notably dry and stony finale where a hint of bitter lemon appears. Domaine Denis Pommier
This estate has come a long way since the Pommiers inherited 2 hectares of vines in 1990. They bottled their first wine in 1994 and now produce fabulous wines from their 16 hectares of vineyards. Denis and Isabelle Pommier have built up quite a following amongst sommeliers 'in the know' in recent years, and certainly the Petit Chablis is a brilliant wine to serve by the glass. It is a model of brisk freshness - made entirely in stainless steel - while the Premier Crus benefit from a small amount of barrel-fermentation and élevage.
