Sweeter, candied lemon & orange, almost creamy, aromatic with mineral back note, then floral, cut straw. With air you start to get fennel, aniseed touches. Pure intense citrus, sappy, tangy with green pepper and herb, textured and sleek. Then aromas turn to dried Rose petals, powdered lemon, almost sherbert. L&S (Jun 2020)

Crushed rocks, a spritz of lime and freshly sliced green apple form an inviting bouquet as the 2019 Etna Bianco di Sei unwinds in the glass. This is soft-textured yet decidedly savory, even saline in character, with saturating minerality and tart orchard fruits that create a cheek-puckering tension. While a bit short, the 2019 finishes crisply refreshing, while leaving the palate reset for another salty sip. The Bianco di Sei is a blend of 70% Carricante and 30% Catarratto. White flowers, earth notes, flint and Granny Smith apple create a savory bouquet on the 2019 Etna Bianco di Sei. It鈥檚 soft-textured with a noticeable inner sweetness, which is nicely balanced by zesty green citrus and tart orchard fruits. This finishes a bit short yet steely clean, resonating on salty mineral notes. The Bianco di Sei is very nice, but I find myself craving more depth. Palmento Costanzo

A property of 14 hectares in Contrada Santo Spirito, Passopisciaro, on the northern slopes of Etna. 10 hectares are planted with vines on walled terraces on volcanic rocks between 600-800 metres altitude. The Costanzos came here in 2011 - they are from Catania - and meticulously restored the palmento (the word for the olive millstone which gave the farm its name). The vineyards are planted employing the 鈥榞obelet' method and farmed organically. The 2017鈥檚 are certified organic. This is an amazing new project which has been given all the investment and attention it needed to make great wines from the outset.
